Ingredients
- 3 large beets, peeled and cut into small pieces
- 2 tablespoons extra virgin olive oil
- 2 1/2 tablespoons lemon juice (fresh is best)
- 3 tablespoons honey
Recipe Notes
- I used a baking pan lined with aluminum foil, which makes for easier cleanup (beets can be messy)!
- The bright color of beets can rub off on fingers, clothing or counters, so quick cleanup to avoid staining can be helpful.
- If you want to stir the beets halfway through the baking time, feel free, but it's not absolutely necessary.
- I prefer to squeeze my own fresh lemon juice, but you can use bottled lemon juice in a pinch.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- Pour the beets into a baking dish lined with aluminum foil, ensuring they're evenly distributed.
- In a small mixing bowl or measuring cup, add the olive oil, lemon juice and honey. Add sea salt and black pepper, to taste, if desired. Whisk to combine. Pour the mixture over the beets in the baking dish.
- Toss to coat beets in the mixture.
- Bake in a preheated 375-degree F oven for about 30 minutes, or until crisp-tender. Stir beets halfway into baking time, if desired, to ensure even baking.
