Bubba's Copycat Hush Puppies Recipe: They're Good, & That's All I Have to Say About That

My favorite hush puppies are at Bubba Gump Shrimp Co. The restaurant offers these hush puppies with some of their seafood dinners and as an appetizer option. I always order an appetizer because I cannot stop eating them. These hush puppies are moist – almost creamy inside – and loaded with bits of corn, peppers and sometimes, depending on what location, seafood. Delicious.

Knowing I was frying fish soon, I decided to research a copycat recipe of these fried hushpuppies, and found one in The Bubba Gump Shrimp Co. Cookbook. While this version does not have any seafood in it, they are still amazingly moist and loaded with flavor. All you need to make these homemade hush puppies is self-rising cornmeal, self-rising flour, salt, sugar, eggs, milk, jalapenos, a can of cream-style corn and an onion. Oh, don't forget the vegetable oil for frying these babies!

The hush puppies at the restaurant are served with a sweet orange sauce and a Cajun-style dipping sauce. I'm on the hunt for the orange sauce recipe, but they're equally delicious with ketchup, remoulade sauce, cocktail sauce and tartar sauce. Ingredients

  • 2 cups self-rising cornmeal
  • 1 cup self-rising flour
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar
  • 3 eggs
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 2 jalapeno peppers, seeded, ribs removed and chopped small 
  • 1 can (17 ounces) cream-style corn
  • 1 onion, chopped
  • vegetable oil, for frying

Here's how to make it: 

  1. In a bowl, whisk together the cornmeal, self-rising flour, salt and sugar. 
  2. In a small bowl, stir together the eggs and milk. While whisking, slowing add it to the flour mixture until just moistened. Do not overmix. 
  3. Fold in the cheese, jalapenos, can of corn and onion. 
  4. In a saucepan heat about 2 inches of vegetable oil to 375 degrees F. Drop the hush puppy batter by tablespoons carefully into the hot oil. Cook, turning once, until golden brown and cooked through, about 3 minutes. Remove to paper towels. Repeat with the remaining batter.
