If you enjoy the flavors of maple, honey and Dijon, do I have a chicken recipe for you! Inspired by Donna John’s popular Man Pleasin’ Chicken recipe (also known as Katie Pleasin’ Chicken because her daughter loves it so much), I came up with a variation that knocked my husband’s socks off. So I guess I could call this recipe “Husband Pleasin’ Chicken,” but since it pleases me, too, I’m just calling it delicious.
This easy maple honey Dijon baked chicken recipe has only five ingredients, but they are amazing gluten-free ingredients that you might not think to put together: Dijon mustard, maple syrup, honey, apple cider vinegar and, of course, chicken! You also can add some rosemary, but that’s optional.
You simply mix together the sauce ingredients, pour the sauce over the chicken in a baking pan, then bake it for about 45 minutes. That’s it! This high-protein dinner is on the table in under an hour. (Read about the health benefits of protein.)
Serve this easy, delicious chicken dinner recipe over rice to soak up all the yummy sauce, and a side of vegetables. I know you’ll be pleased, too!
Cuisine: American
Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes
Servings: 8
Ingredients
- 2 pounds boneless/skinless chicken thighs or chicken breasts (I used a combination of both)
- 3/4 cup Dijon mustard
- 1/4 cup maple syrup
- 1/4 cup honey
- 1 tablespoon apple cider vinegar
- fresh or dried rosemary, optional (I used 1/2 teaspoon dried rosemary)
Here's how to make it:
- Preheat oven to 400 degrees F and position rack in middle of oven. In a small bowl, combine the Dijon mustard, maple syrup, honey, apple cider vinegar and rosemary, if using.
- Put the chicken into a 13x9-inch baking pan. Season the chicken with salt and pepper.
- Pour the maple honey mustard sauce mixture over the chicken, ensuring that the sauce completely covers the chicken. Bake uncovered for about 22 minutes.
- Remove chicken from oven and flip each piece over, ensuring it’s covered by the sauce.
- Bake for another 23 minutes, for a total of about 45 minutes, or until chicken is cooked through. (Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.) Serve over rice with a side of fresh vegetables.
