Fresh sliced mushrooms, onion and garlic are cooked in olive oil for a few minutes before adding in the fresh baby spinach. Add handfuls of the spinach at a time and let it wilt before adding more. Season well with salt and pepper, and this easy side dish is ready to be served.

Ingredients
- 2 tablespoons olive oil
- 4 cups sliced fresh mushrooms
- 1/3 cup chopped onion
- 5 cloves garlic, minced
- 10 - 12 ounces (2 bags) baby spinach
Here's how to make it:
- Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and onions. Cook, stirring often, about 2 minutes. Add the garlic and cook 30 seconds. (Use whatever type of mushrooms you like!)
- Slowly start adding in the spinach and cook, stirring, until wilted and all has been added to the pan. Season with salt and pepper. Store the side dish in an airtight container in the fridge and reheat in the microwave.
