This quick four-ingredient chicken recipe is so simple and delicious. To make this high-protein chicken recipe, here are the ingredients you'll need to gather: bacon, boneless/skinless chicken breasts, dry ranch seasoning and shredded mozzarella or cheddar cheese. The gluten-free chicken recipe starts by cooking bacon in a skillet until crispy. The chicken breasts are then cooked until golden in the bacon fat. Sprinkle the chicken with the dry ranch seasoning then top with the crumbled bacon and shredded mozzarella or cheddar cheese. Almost done! Just wait for the cheese to melt in the skillet. Ingredients
- 8 slices thick-cut bacon
- 4 thin-cut boneless/skinless chicken breasts (or thighs)
- 2 1/2 tablespoons dry ranch seasoning
- 1 1/2 cups shredded mozzarella or cheddar cheese
- chopped green onions and tomatoes, for garnish (optional)
- barbecue sauce (optional garnish)
Here's how to make it:
- In a large skillet over medium heat, cook bacon until crispy, about 8 to 10 minutes. Transfer to a paper towel. Leave the bacon fat in the skillet.
- Season chicken with salt and pepper, to taste, if desired. Return the skillet to medium-high heat, add the chicken and cook until golden and just cooked through, about 6 to 8 minutes on each side. (You could use boneless chicken thighs instead of chicken breasts. Keep in mind that it may affect cooking time.)
- Reduce heat to medium, sprinkle chicken with ranch seasoning and top with bacon and cheese. Cover the skillet and cook until cheese is melted and bubbly, about 5 minutes. Crumble additional bacon on the chicken, along with some green onion and tomato, if desired, before serving. (Chicken is done when it reaches 165 degrees F on a food thermometer. For even more flavor, squirt some barbecue sauce on top of the chicken before serving.) Store any leftovers in an airtight container in the refrigerator.
