Cabbage Au Gratin Recipe: An Easy Low-Carb Cabbage Casserole Recipe

Cabbage is loaded with health benefits, and it is a popular vegetable with certain diet plans like keto and when just eating healthy. But cabbage can get boring if you're just eating it boiled or steamed. This easy au gratin cabbage recipe is anything but boring.

Cabbage, carrot and green onion are cooked until crisp-tender in a skillet. The vegetables are poured into a shallow baking dish. A mixture of milk, an egg and Swiss cheese is poured over the top. Sprinkle some Parmesan on top before baking it in the oven for about 30 minutes. The result is a creamy, colorful cabbage side dish recipe that fits into your low-carb lifestyle.

Serve this cheesy baked cabbage with chicken, pork, beef, lamb or seafood. The recipe makes two servings, but could easily be doubled for a family. The vegetable casserole reheats well in the microwave.

Ingredients

  • 2 cups shredded cabbage

Here's how to make it: 

  1. Cook the cabbage, carrot and green onions in a nonstick skillet until crisp-tender, about 5 minutes.
  2. Pour the vegetables into a lightly greased shallow 1-quart baking dish.
  3. In a bowl, stir together the egg, milk and Swiss cheese. Season with salt and pepper.
  4. Pour the mixture over the cabbage. Sprinkle with the Parmesan cheese.
  5. Bake in a preheated 350-degree F oven for about 30 minutes.
