Need an easy and healthy side dish for Thanksgiving? Sweet potatoes are high in fiber, antioxidants, beta carotene, vitamins and minerals. Besides the health benefits of sweet potatoes, they are incredibly yummy and easy to cook.
This simple baked sweet potato wedges recipe has just three ingredients: sweet potatoes, olive oil and chopped fresh parsley. The ingredients are tossed together then baked for about 30 to 40 minutes or until tender. While the potatoes bake, you have time to prepare the protein and throw together a salad.
Serve these high-fiber sweet potatoes as a side dish with dinner or as an appetizer with a creamy dip like ranch.

Ingredients
- 3 medium sweet potatoes, washed and cut into large wedges
- 1/3 cup olive oil
- 2 tablespoons fresh chopped flat-leaf parsley
Here's how to make it:
- Put the sweet potato wedges into a bowl. Toss with the olive oil and parsley. Season with salt and pepper. (You could use another herb in place of the fresh parsley. Rosemary, thyme, oregano or even cilantro would taste amazing with the sweet, creamy sweet potatoes.)
- Put the sweet potatoes onto a baking sheet, skin side down. Bake in a preheated 400-degree F oven for about 30 to 40 minutes. Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
