Ingredients

  • 1 package (14 ounces) frozen cut leaf spinach, thawed and squeezed dry
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1 cup mayonnaise
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 loaf (16 ounces) Italian bread
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon fresh chopped parsley

Here's how to make it: 

  1. Mix the spinach, artichokes, mayonnaise, Parmesan, garlic and salt together in a large bowl until combined.
  2. Slice the top of the loaf longways, then crossways, being careful not to cut the loaf all the way through. Spread the spinach mixture between each bread slice. Top with the mozzarella.
  3. Transfer to a rimmed baking sheet. Bake in a preheated 350-degree F oven until the cheese is melted, and the bread is lightly toasted, about 15 to 20 minutes. Garnish with the parsley. Serve warm.
