Cuisine: American
Prep Time: 10 minutes plus 1 hour to chill
Cook Time: 8 to 10 minutes
Total Time: 1 hour and 20 minutes
Servings: 24
Ingredients
- 1 large lemon (you'll need all the zest plus 2 tablespoons of juice)
- 1/2 cup granulated sugar, plus additional for rolling
- 2 cups flour
- 1 1/2 teaspoons baking powder
- pinch of salt
- 6 tablespoons unsalted butter, softened
- 1 egg
- powdered sugar, for rolling
Here's how to make it:
- Put the granulated sugar and lemon zest into a small bowl. Use your fingers to combine until sugar is moist and fragrant. Set aside. (Use a fine grater or microplane to zest the lemon.)
- Whisk together the flour, baking powder and salt. (For gluten-free cookies, use gluten-free flour.)
- In another bowl, cream the butter and sugar-lemon sugar mixture with an electric mixer until light and fluffy. Add the egg and 2 tablespoons of lemon juice. Beat until smooth. Add the dry ingredients and mix until just combined. Cover and refrigerate the dough for 1 hour.
- When ready to bake, put some granulated sugar into a small bowl and some powdered sugar into another small bowl. Roll the cookie dough into balls (about 1 tablespoon each). Roll each ball into the granulated sugar and then into the powdered sugar. Place on parchment paper-lined baking sheets. (The number of cookies you get depends on the size of cookies you form.)
- Bake in a preheated 350-degree F oven for about 8 to 10 minutes. Cool the cookies on the baking sheets a few minutes before removing to cool completely. Sprinkle with additional powdered sugar, if desired. Store the cookies in an airtight container to keep them fresh.
