Unripe Tomatoes: Try This Hack for Those Tomatoes That Didn't Ripen on the Vine

Summer, while beautiful this year in the Pacific Northwest, was colder. That meant my tomatoes didn't ripen. So, this fall, I had a bunch of tomatoes on the vine, all of them green. I didn't have a paper bag big enough to "ripen" them. So when I picked them, I expected to make fried green tomatoes. But, my procrastination paid off!

After letting them sit on the counter in a bowl, many ripened on their own. I had garden-fresh tomatoes in my salad in October, and no paper bag necessary. So don't toss your unripened veggies – let them sit and see what happens!
