Ingredients
- 32 ounces (1 box) chicken broth
- 20 ounces (2 cans) cream of chicken soup
- 16 ounces (2 packages) cooked microwaveable rice (like Uncle Ben's Ready Rice)
- 2 - 3 cups cooked shredded chicken or rotisserie chicken
- 1/2 teaspoon black pepper (or to taste)
- 6 large lemons, zested and juiced
- 1 tablespoon chopped fresh dill, parsley or your favorite herb (optional)
Recipe Notes
- You can use leftover chicken or buy a rotisserie chicken.
- For color and freshness, add some dill, parsley or whatever fresh herbs you have on hand.
- If you'd like a thinner or creamier soup, add in a little milk, cream or half and half.
- To make this soup gluten-free, use gluten-free cream of chicken soup.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- Put the broth, cream of chicken soup, rice, chicken, pepper and lemon juice into a soup pot. Bring to a boil, reduce heat and gently simmer about 20 minutes.
- Add the lemon zest and herbs, if using. Serve with lemon wedges, if desired.
