This savory high-protein and high-fiber stuffed pepper soup recipe is loaded with comforting ingredients: ground beef or turkey, onion, garlic, tomatoes, chicken broth, green peppers, rice, brown sugar, basil, cinnamon and shredded cheese for serving (optional). You simply brown the meat and onions, add the remaining ingredients and simmer. Before you know it, you're spooning this gluten-free soup into your bowl!
This easy stuffed pepper soup recipe is ready in 30 minutes and has all the comfort food feels of eating a stuffed pepper. Plus you get the health benefits of peppers, the health benefits of protein and the health benefits of fiber.

Ingredients
- 1 pound ground beef or turkey
- 1 cup chopped onion
- 1 teaspoon minced garlic
- 28 ounces (1 can) crushed tomatoes
- 4 cups chicken broth
- 3 cups chopped green peppers
- 2/3 cup uncooked rice
- 2 tablespoons brown sugar
- 1 teaspoon fresh chopped basil
- 1 teaspoon cinnamon
- shredded cheese, for serving (optional)
Here’s how you make it:
- Brown the meat and onions in a large soup pot.
- Add the remaining ingredients except cheese.
- Simmer over low heat until rice is tender, about 20 minutes. Serve with shredded cheese, if desired. (You can use any type of cheese you like for serving, but that is optional. Cheddar or gruyere work well.) Store the soup in an airtight container in the fridge and reheat in the microwave.
