Ingredients
Carrot Fries
- 2 pounds carrots
- 2 tablespoons avocado oil or olive oil
- 2 teaspoons garlic powder
- 2 teaspoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon cumin
- fresh parsley, for sprinkling (optional)
Chipotle Dip
- 1 cup plain Greek yogurt or coconut yogurt
- 2 tablespoons minced fresh parsley
- 1 tablespoon lemon juice
- 1 teaspoon chipotle pepper flakes, or to taste
- 1 teaspoon garlic powder
- pinch of sea salt
Recipe Notes
- You could also dip these carrot fries in ranch dressing or your favorite dipping sauce.
- If you can't find chipotle crushed pepper flakes use crushed red pepper flakes.
Here's how to make it:
- Preheat the oven to 425 degrees F and line a large sheet pan with parchment paper. Peel, then cut the carrots into fries. Place the carrot fries on the prepared baking sheet. Drizzle with the oil and sprinkle the seasonings. Toss well to evenly coat, then arrange in a single layer. Roast for 15 minutes, or until golden brown, flipping once during roasting.
- Meanwhile, in a small bowl, whisk all the chipotle yogurt dip ingredients together.
- Sprinkle carrots with freshly chopped parsley if desired. Serve your carrot fries with the chipotle yogurt dip and enjoy!
