How to Make Slow Cooker Farmer's Market Minestrone Soup! by Cheryl Leahy

Last week, I ate minestrone soup from a can every night for dinner. Yes, I get lazy! Since my son and I take a weekly trip to different farmer's markets in the area, I decided to create a Farmer's Market Minestrone. I picked all of the vegetables that I love:
- zucchini
- carrots
- kale
- green beans
- sweet corn
To my Crock Pot I added the chopped vegetables and:
- chicken stock
- diced tomatoes
- seasonings
I cooked it for about 4 hours. I added a few handfuls of leftover cooked whole-wheat pasta for the last half hour and YUM! An instant low-cost hit that will last all week!
