The refreshing corn recipe is made with bacon, fresh or frozen corn, red onion, red bell pepper, jalapeno, Cajun seasoning and heavy cream or chicken broth. Ingredients
- 4 slices bacon, chopped
- 3 cups fresh or frozen (thawed) corn kernels
- 1 red onion, chopped
- 1 red bell pepper, chopped
- 1 jalapeno, chopped
- 1 tablespoon Cajun seasoning
- 1/2 cup heavy cream or chicken broth
- hot cooked rice, for serving (optional)
Here's how to make it:
- Cook the bacon in a skillet until crispy, about 6 to 8 minutes. You could use turkey bacon instead of pork bacon.
- Add the corn, onion, red bell pepper, jalapeno and Cajun seasoning. Cook, stirring, until vegetables are crisp-tender, about 8 to 10 minutes. You could use green, orange or yellow bell pepper instead of red – or a combination.
- Add the cream or broth and cook about 2 more minutes. Season with salt and pepper, if desired. Serve over rice. You could use white rice, jasmine rice, basmati rice or brown rice. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
