Peach cobblers are all the rage right now. Why is this peach cobbler recipe magic? Because of the crispy sugary topping that magically appears while it's baking. This old-fashioned peach cobbler is so good – and grandma approved even though it uses canned peaches. (No peeling or pitting required in this shortcut recipe.)
Canned peaches can be found year-round, which makes this cobbler a year-round dessert. All you need to make this sweet peach dessert recipe is canned peaches, butter, granulated sugar, vanilla, milk, flour, salt, baking powder, cinnamon and cornstarch. If you can find fresh juicy summer peaches, you can use them in place of the canned peaches. Frozen will work, too. Top warm bowls of the peach cobbler with vanilla ice cream and call it a day.

Ingredients
- 3 cups canned sliced peaches in juice (drained), sliced fresh peaches or frozen peaches
- 1/2 cup (8 tablespoons) butter, softened
- 3/4 cup granulated sugar
- 1 1/2 teaspoons vanilla
- 1/2 cup milk
- 1 cup flour
- 1 teaspoon baking powder
Topping
- 1/3 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1/4 cup boiling water
Here's how to make it:
- Arrange the peaches on the bottom of an 8x8-inch baking dish. (You can use canned, fresh or frozen peaches for this easy dessert recipe. Double the recipe and bake it in a 13x9-inch pan.)
- In a bowl, cream together the butter, sugar and vanilla with an electric mixer. Add the milk, flour and baking powder. Mix well. Spread over the peaches.
- In another bowl, whisk together the sugar, cinnamon and cornstarch. Sprinkle over the batter, then pour the boiling water carefully over the top.
- Bake in a preheated 375-degree F oven for about 40 minutes or until golden brown. Store any leftover cobbler in an airtight container in the fridge and reheat in the microwave.
