Looking for the perfect Mexican appetizer? You may have just found it! Queso fundido translates to "melted cheese." Great description, we think! After all, what's not to love about melted cheese – especially when it's combined with Mexican chorizo sausage, onion and poblano peppers? Nada! 

With spicy Mexican chorizo, poblano peppers, onions and two kinds of cheese, this queso fundido recipe will make any queso lover happy. This Mexican recipe starts in a cast iron skillet on the stove and ends with that same skillet in the oven to melt the glorious cheese – all in only about 30 minutes. 

To make this cheesy gluten-free appetizer, you'll need the following ingredients: chorizo, a poblano pepper, an onion, Oaxaca cheese and Monterey Jack cheese. The fresh cilantro garnish is optional.

The chorizo is cooked in the skillet then removed to a mixing bowl. Next, you cook the onions and peppers until soft then add them to the bowl with the chorizo. Then, you put half the cheese onto the bottom of the skillet, top it with the mixture then add the remaining cheese on top of that. You bake it until it's bubbly and golden, then serve it with tortilla chips. Amazing!

You can top this Mexican queso recipe with fresh cilantro, pico de gallo, sour cream, guacamole or whatever you like. A cool garnish helps cut some of the richness of the chorizo and cheese. Enjoy on Cinco de Mayo or anytime!

Ingredients

  • 8 ounces Mexican chorizo
  • 1 poblano pepper, roasted, seeded and chopped (here's how to roast poblano peppers)
  • 1 cup chopped onion
  • 8 ounces Oaxaca cheese, grated
  • 8 ounces Monterey Jack cheese, grated
  • fresh cilantro, for garnish (optional)

  • For additional heat, add a sprinkle of crushed red pepper flakes.
  • Garnish with fresh cilantro, if desired. 
  • Top with salsa, sour cream, guacamole, shredded lettuce or other favorite toppings.
  • Store leftovers in an airtight container in the refrigerator.

Here's how to make it: 

  1. Cook the chorizo in an ovenproof skillet (we think a cast iron skillet works best) until cooked through, breaking up the chorizo as it cooks. Remove with a slotted spoon to a mixing bowl.
  2. Add the onion and chopped poblano peppers to the skillet. Cook until the onion is soft, about 3 to 4 minutes. Put the onions and peppers into the bowl with the chorizo and stir to combine. 
  3. Turn off the heat. Put half of the cheese onto the bottom of the skillet. Top with the chorizo, onion and poblano mixture. Add remaining cheese on top. 
  4. Bake in a preheated 400-degree F oven for about 10 minutes or until cheese is bubbly and beginning to lightly brown. Garnish with chopped cilantro, if desired. Serve warm with tortilla chips.
