If you ask me, one of the best parts about summer is the farmers market and all the farm-fresh strawberries. My family and I went to a local farmers market over the weekend and picked up the sweetest strawberries we have ever tasted. We plan to return every summer weekend to get fresh strawberries, homemade bread, the best granola and other farmers market favorites.
I’m dreaming up all the goodies I can make with the strawberries! I’ve already made yogurt parfaits, which my sons and I love. And now, this delicious no-bake strawberry pie recipe. As far as pie recipes go, this is one of the easiest I've found. This delicious strawberry pie is summer on a plate (and low-sodium, too)! Plus, check out the health benefits of strawberries.
The ingredient list is short for this no-bake pie recipe, which is always a plus for me. You will need a store-bought or homemade graham cracker pie crust, fresh strawberries, granulated sugar, cornstarch and water. The heavy whipping cream to make homemade whipped cream is optional.
Serve this simple strawberry pie as the perfect summer dessert and get ready for rave reviews. It makes an excellent snack any time of day, of course!

Ingredients
- 1 store-bought graham cracker crust (or your favorite regular or gluten-free pie crust)
- 1 quart fresh strawberries
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 3/4 cup water
- 1/2 cup heavy whipping cream (for optional whipped cream topping)
Here's how to make it:
- Arrange half the strawberries in the pie crust. (To make this pie gluten-free, use a gluten-free pie crust.)
- Mash the remaining berries and combine with the sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
- In a small bowl, whisk together the cornstarch and water. Gradually stir the cornstarch mixture into the boiling strawberry mixture. Reduce heat and simmer until thickened, stirring constantly, approximately 10 minutes. Pour mixture over the strawberries in the pie shell. Chill for 5 hours to overnight before serving.
- If you'd like to make the homemade whipped cream, add the heavy whipping cream to a small bowl and whip until soft peaks form. Top each slice of pie with whipped cream, if desired. (If you don't feel like whipping the cream, you can use non-dairy whipped cream or whipped topping in a can.)
- Store leftovers covered in the refrigerator.
