Amaretti cookies are an Italian cookie made with almond flour, egg whites and almond extract. The easy almond cookie recipe is gluten free, a little crisp on the outside and chewy on the inside. Divine!

This easy, delicious dessert recipe is perfect for special occasions, holidays, or anytime. It's the perfect way to say I love you (or ti amo)!

Ingredients

Here's how to make it: 

  1. Combine the flour, sugar and lemon zest in a bowl. Whisk to combine. 
  2. In another bowl, beat the egg whites with an electric mixer until soft peaks form. Beat in the almond extract.
  3. Fold the egg white mixture into the dry ingredients until just combined. 
  4. Put a little granulated sugar in a small bowl. Roll tablespoons full of the dough into a balls, lightly sprinkle with some granulated sugar and place on parchment paper-lined baking sheets
  5. Bake in a preheated 325-degree F oven for about 22 to 25 minutes or until lightly golden brown.
