This easy cookie recipe is full of moist, healthy blueberries and is the perfect snack or even an on-the-go breakfast.
With 10 simple ingredients, this tender blueberry oatmeal cookie is perfect dipped into coffee or milk. Here's your easy shopping list: butter, vegetable oil, brown sugar, egg, vanilla extract, flour, baking soda, dash of salt, old-fashioned oats and fresh blueberries. Ingredients
- 1/4 cup butter, softened
- 1/4 cup vegetable oil
- 1 cup brown sugar, packed
- 1 egg
- 1 1/2 teaspoons vanilla
- 1 cup flour
- 1 teaspoon baking soda
- dash of salt
- 1 1/2 cups old-fashioned oats
- 1 cup fresh blueberries
- 1/2 cup chopped walnuts (optional)
Here's how to make it:
- In a medium mixing bowl, beat the butter, vegetable oil and brown sugar together until creamy. Add the egg and vanilla. Mix well.
- In another bowl, combine the flour, baking soda, salt and oats. Whisk to combine. Stir into the wet ingredients. (If you want these cookies to be gluten-free, use gluten-free flour. Oats are naturally gluten-free, but if you need to be sure, use gluten-free oats.)
- Gently fold in the blueberries, and the walnuts, if using.
- Drop tablespoons full of dough onto baking sheets. (The number of cookies you get depends upon the size of cookies you form. This recipe can be easily doubled.)
- Bake in a preheated 350-degree F oven for about 13 to 15 minutes or until cookies are beginning to brown. Remove to cool. Store the cookies in an airtight container.
