Ingredients
- 8 tablespoons (1 stick) butter, softened
- 1/3 cup granulated sugar
- 1 1/2 teaspoons vanilla
- 1 cup flour (all-purpose or gluten-free flour)
- 1 cup chopped pecans
Here's how to make it:
- With an electric mixer, beat the butter until light and fluffy, about 1 minute. Add the sugar and continue to beat for 1 more minute. Add the vanilla and flour. Stir until just combined. Fold in the pecans. (If you want these cookies to be gluten-free, use gluten-free flour.)
- Roll the dough into balls and place on a cookie sheet. Using the bottom of a drinking glass or measuring cup, flatten the cookies.
- Bake in a preheated 350-degree F oven for about 13 to 15 minutes or until lightly golden. Remove and allow to cool before serving. Store the cookies in an airtight container. This recipe can easily be doubled to make 24 cookies.
