Here's how to make them: 

  • With an electric mixer, beat the butter and maple syrup together until creamy. Add the eggs and vanilla. Mix well.
  • In another bowl, combine the flour, baking soda, cinnamon and salt. 
  • Add the dry ingredients to the wet ingredients until just combined. 
  • Mix in the oats and nuts, if using. 
  • Drop by tablespoons onto cookie sheets. Bake in a preheated 350-degree F oven for about 10 to 12 minutes or until golden brown.
