Risengrød (rice pudding) is a traditional dish in Denmark, where it is served throughout December, especially around Christmas. We think this Danish rice pudding recipe is too good to just eat in December.

- 1 cup short-grain rice
- 1/2 cup water
- 1 teaspoon salt
- 4 cups milk
Topping
- 1/3 cup granulated sugar
- 1 tablespoon cinnamon
- butter, for serving
Here's how to make it:
- Put the rice, water and salt into a saucepot. Let it boil for 2 minutes.
- Add the milk. Cover and let simmer for about 30 minutes, stirring often.
- While the rice simmers, combine the sugar and cinnamon in a bowl.
- Spoon the pudding into bowls and top with a pat of butter and a generous amount of cinnamon sugar.
