- 1 large or 2 medium eggplants, cut into 1-inch cubes
- 2 tablespoons olive oil
Sauce
- 2 tablespoons olive oil
- 1 small onion, chopped fine
- 4 cloves garlic, minced
- 1/4 cup white wine
- 1 can (24 ounces) tomato puree
- 1/4 cup water
- 1 teaspoon dried Italian seasoning
- crushed red pepper flakes, to taste
- 12 ounces pasta, cooked according to package directions
- freshly grated Parmesan cheese, for serving
Here's how to make it:
- To prepare the eggplant, toss the cubed eggplant with the olive oil. Season with salt and pepper. Put onto a parchment paper-lined baking sheet. Bake in a preheated 450-degree F oven for about 20 to 25 minutes, flipping it over halfway through cooking, until browned and caramelized.
- To make the sauce, heat the olive oil in a skillet over medium heat. Add the onion and cook until soft, about 3 minutes. Add the garlic and cook 30 seconds.
- Increase the heat to high and add the wine. cook until it almost evaporates, then pour in the tomato puree and water. Add the Italian seasoning and red pepper flakes. Season with salt and pepper. Cook, stirring, about 5 minutes.
- Add the eggplant and cooked pasta. Toss to coat. Serve with freshly grated Parmesan cheese.
