An Anzac biscuit is a sweet, crunchy cookie that's popular in Australia and New Zealand. The key players in the biscuit are oats, coconut and golden syrup, which is a sweet amber syrup used for baking in the U.K.
To make these oatmeal cookies you will need flour, rolled oats (read about the health benefits of oats), unsweetened shredded coconut, granulated sugar, butter, golden syrup (substitution provided in recipe below) and baking soda.

Ingredients
- 1 cup flour (or 1:1 gluten-free flour)
- 1 cup rolled oats
- 1 cup flaked unsweetened coconut
- 3/4 cup granulated sugar
- 10 tablespoons butter
- 4 tablespoons golden syrup OR 1 tablespoon molasses combined with 3 tablespoons honey or light corn syrup
- 1 teaspoon baking soda
Here's how to make it:
- Combine the flour, rolled oats and sugar in a bowl. Set aside.
- In a saucepot, combine the butter and golden syrup or replacement. Cook on low until butter melts. Add the baking soda and stir. Turn off the heat.
- Add the butter mixture to the flour. Stir until just combined. (You could add in some chopped nuts for even more crunch.)
- Roll the dough into balls and place on a parchment paper-covered baking sheets. Flatten the cookies into rounds with your fingers.
- Bake in a preheated 350-degree F oven for about 15 minutes or until golden brown. Remove to cool. Store the cookies in an airtight container to keep them fresh.
