Ingredients
- 1 cup flour
- 1 cup rolled oats
- 1 cup flaked unsweetened coconut
- 3/4 cup granulated sugar
- 10 tablespoons butter
- 4 tablespoons golden syrup OR 1 tablespoon molasses combined with 3 tablespoons honey or light corn syrup
- 1 teaspoon baking soda
Recipe Notes
- Store the cookies in an airtight container to keep them fresh.
- You could add in some chopped nuts for even more crunch.
Here's how to make it:
- Combine the flour, rolled oats and sugar in a bowl. Set aside.
- In a saucepot, combine the butter and golden syrup or replacement. Cook on low until butter melts. Add the baking soda and stir. Turn off the heat.
- Add the butter mixture to the flour. Stir until just combined.
- Roll the dough into balls and place on a parchment paper-covered baking sheets. Flatten the cookies into rounds with your fingers.

Bake in a preheated 350-degree F oven for about 15 minutes or until golden brown.
