I only have one rule when it’s my turn to cook (my husband and I share this responsibility) – the recipe has to be easy! This Mississippi pot roast recipe is one of the easiest and most delicious slow-cooker meals ever! Just throw it all in the slow cooker and walk away. Seriously! This mom-approved recipe changed my life because I now don't dread making dinner.
To make this beef recipe you will need just five simple ingredients that you can keep in my pantry for pot roast emergencies. Here is your short shopping list: a boneless beef roast, butter, a packet of au just gravy mix, a packet of dry ranch dressing mix and a jar of pepperoncini peppers.
All the ingredients are put into the slow cooker, then about eight hours later you'll have a juicy, tender, flavorful roast that literally falls apart. We like to serve this juicy pot roast over mashed potatoes or roasted potatoes, but it would be good over rice, egg noodles or your favorite grain. Add a vegetable or a salad and dinner is done.

Ingredients
- 3- to 4-pound boneless beef roast
- 1 stick (8 tablespoons) butter
- 1 ounce (1 packet) au jus gravy mix
- 1 ounce (1 packet) dry ranch dressing mix
- pepperoncini peppers, as many as you wish (add a little of the juice)
Recipe Notes
- I typically use a chuck roast for this recipe, but use your favorite.
- I've tried this recipe with chicken and it's also delicious. You will need to adjust the cooking time, as chicken cooks after than a hunk of beef.
- To reduce the sodium, use low-sodium au jus mix.
- Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
Here's how to make it:
- Put the roast in a slow cooker. Season with salt and pepper.
- Add the butter, au jus gravy mix, ranch dressing mix, pepperoncini peppers and some juice.
- Cook on low until tender, about 8 hours.
