Air Fryer Roasted Carrots Recipe: Perfectly Roasted Carrots That Don't Take Up Oven or Stovetop Space on Thanksgiving

Free up that oven and stovetop space this Thanksgiving by making this easy air fryer roasted carrots recipe. They are absolutely delicious and come out perfectly roasted and flavorful. No mushy carrots here! This recipe can be made in an air fryer with a basket or tray. (I used an Emeril Lagasse 360 Air Fryer Oven.) Try this with other root vegetables, too.

Here's how to make it:

Cut the carrots, peeled or unpeeled, diagonally into chunks. (I did not peel mine.) Put them into a bowl.

In a small bowl, combine the sugar, garlic salt and butter. Melt in the microwave. Stir to combine.

Pour the butter over the carrots. Toss to coat the carrots.

Cover the air fryer basket or tray with aluminum foil. Pour the carrots onto the foil.

Air fry the carrots at 390 degrees F for 15 minutes.

We had these last night, and I am already looking forward to making them again next week. I'm usually eh about carrots. I can take them or leave them. But these I could not stop eating. Highly recommend if you have an air fryer.
