Looking for a new way to cook cauliflower? This creamy cauliflower recipe is super simple to make and has just five ingredients. Tender cauliflower is baked with rich, cheesy sauce to create a vegetable side dish easiest enough for Monday night but impressive enough to serve at a holiday gathering.
To make this baked vegetable casserole recipe you will need fresh cauliflower (check out the health benefits of cauliflower), butter, flour, sour cream and Parmesan cheese. The cauliflower is steamed until tender. While the cauliflower cooks, make the easy cheese sauce. Combine the two and bake for about 20 minutes. You could skip the baking part and simply serve it out of the saucepot.
This vegetable side dish recipe would be just as delicious baked or not. It's the perfect side dish for Thanksgiving dinner.

Ingredients
- 3 - 4 cups cauliflower florets
- 1 stick (1/2 cup) butter
- 3 tablespoons flour (all-purpose or gluten-free flour)
- 1/3 cup sour cream
- 1/3 cup shredded Parmesan cheese, plus more for the top
Here's how to make it:
- Steam the cauliflower until crisp-tender, about 5 minutes. (Fresh is always best, but you could use frozen cauliflower. Thaw before using.)
- Melt the butter in a saucepot. Whisk in the flour until smooth. Remove from heat.
- Stir in the sour cream and cheese. Season with salt and pepper. Add the cauliflower. Stir to combine. If not baking, cook about 2 minutes. (Freshly grated cheese melts better, so grate the Parmesan if you can.)
- To bake, pour the mixture into a casserole dish. Sprinkle with more Parmesan cheese. (For some crunch, you could sprinkle a little panko breadcrumbs on top before baking.)
- Bake in a preheated 425-degree F oven for about 10 minutes or until top begins to brown.
