Ingredients
- 15 ounces (1 can) black beans, rinsed and drained
- 15 ounces (1 can) whole kernel corn, drained
- 1/3 cup chopped red bell pepper
- 3 - 4 green onions, chopped
- 1 tablespoon olive oil
- 1 tablespoon lime juice
Here's how to make it:
- Combine all the ingredients in a bowl. Season with salt and pepper. (For a little heat, stir in some fresh chopped jalapeno or serrano peppers or crushed red pepper flakes.)
- Toss to combine. Refrigerate until ready to serve. Store the salad in an airtight container in the fridge.
