Yum! I grew up eating pimento cheese sandwiches, but my mom always bought it premade in a tub. Homemade is SO much better. I like to add chopped jalapeno to mine.

Glad to see this made with mayonnaise and not Miracle Whip. Pimento cheese always makes me think of my mom. She didn't make it really often but it was always just simple with cheese, mayo, and pimentos. The Velveeto must make it extra creamy! The only store bought stuff I buy is Palmetto Farms--it tastes the closest to my mom's though it has pepper in it. Mom was not a pepper user. I love to slather bread with pimento cheese and heat it up in the toaster oven for breakfast!

Sorry, but that is gross. Born and breed southern says Velveeta is cheap, non-food crap that just isn't there! Real cheese isn't that difficult, is it? A few seconds in the food processor, pimentos and mayo!

Sorry this recipe isn't for you. Velveeta is used in a lot of recipes to make it creamy. Spread on a cracker it is delicious. You could definitely substitute shredded cheddar.

Haha, I know what it is. It's just such low quality "food" and so far away from real food and high quality cheeses. After milk protein it's food starch, canola oil and gelatin. Yet, it has 4× more lactose than real cheese. IThere are many real cheeses that ate creamy. I wouldn't feed Velveeta to anyone I had well-wishes for. I wouldn't want to see a stray puppy eating it, what to speak of a beloved child. SAD, standard American diet stuff that makes Americams the sickest, fattest people in any developed country.
