What happens when two cultures combine? A delicious corn side dish! Korean corn cheese is a Korean-American side dish that's typically served with Korean barbecue, but it can also be served as an appetizer with tortilla chips.
The ingredients are simple in this Korean corn cheese recipe. Here is your short shopping list: corn (usually canned), mayonnaise and cheese. You can throw in a couple other fresh ingredients like we did in this recipe (see Recipe Notes) to add some nutrition (check out the health benefits of corn).
Serve this creamy corn dish was a side dish with dinner alongside chicken, beef, pork, lamb or seafood. If you serve it for an appetizer, be sure to have plenty of crispy tortilla chips or corn chips.

- 15 ounces (1 can) whole kernel corn, drained
- 1/2 cup mayonnaise
- 1 cup shredded mozzarella cheese
Recipe Notes
- To add even more flavor and color to the recipe, add two chopped green onions and 2 tablespoons chopped red pepper.
- If you don't want to use canned corn, use two corn of the cobs, kernels removed from the cob.
- You could use any good melting cheese for this recipe. Instead of mozzarella, try gruyere, fontina, Swiss or a Mexican or Italian blend.
- Store the corn in an airtight container in the fridge. Reheat in the microwave.
Here's how to make it:
- Combine all the ingredients in a bowl. Season with salt and pepper. Mix well. Pour into an ovenproof skillet or baking dish.
- Bake in a preheated 400-degree F oven for about 10 to 12 minutes minutes. If desired, broil for 1 to 2 minutes to brown the top.
