Ingredients
- 1 unbaked deep-dish pie crust
- 4 cups sliced fresh mushrooms (button, baby bella, cremini, shiitake, oyster, your favorite mushroom or a combination)
- 1/2 cup chopped onion
- 1 tablespoon butter
- 1 cup shredded cheddar cheese, white cheddar cheese, gouda, fontina or your favorite cheese
- 2 tablespoons flour
- 1 1/4 cups whole milk
- 4 eggs, beaten
- 1 tablespoon minced fresh thyme
- cayenne pepper, to taste
Here's how to make it:
- Bake the pie crust in a preheated 425-degree F oven until golden, about 8 minutes. Remove and set aside. Reduce the oven temperature to 350 degrees F.
- Heat the butter in a skillet. Cook the mushrooms and onion until tender, about 6 to 7 minutes.
- In a bowl, combine the cheese, milk, flour, eggs, thyme, cayenne pepper, to taste, and salt and pepper. Whisk to combine. Stir in the mushrooms and onions. Pour into the pie crust.
- Bake for about 40 to 45 minutes or until quiche is set.
