This easy mashed potato recipe would be a perfect side dish for that Thanksgiving turkey. Shape the leftovers into patties and fry them in a little olive oil or butter. Delish!

Ingredients

  • 3 tablespoons butter
  • 6 - 8 small russet potatoes, cooked and sliced
  • 1 1/2 cups half and half
  • chopped fresh parsley, for garnish (optional)

Here's how to make it: 

  1. Melt the butter in a cast iron skillet (preferred) or nonstick skillet. Add the sliced potatoes and cook until they begin to lightly brown.
  2. Pour in the half and half. Gently simmer until the potatoes absorb all the liquid, about 12 to 15 minutes. Season with salt and pepper. Garnish with chopped fresh parsley, if desired.
