While many may not like the name, this explains how funeral potatoes came to be. This easy potato casserole recipe is a classic. Forget the name, this creamy hash brown casserole recipe is a comforting side dish even on happy days like Thanksgiving and Christmas (or Monday).

To make this southern funeral potato casserole recipe you will need a bag of hash brown potatoes, butter, onion, sour cream, two cans of cream of chicken soup, cheddar cheese, cornflakes and green onions.

Ingredients

• 32 ounces (1 bag) diced hash brown potatoes, thawed
• 4 tablespoons butter 
• 1 onion, chopped
• 1 1/2 cups sour cream
• 20 ounces (2 cans) cream of chicken soup
• 3 cups grated cheddar cheese (divided)

Topping

• 1 1/2 cups crushed cornflakes
• 4 tablespoons butter, melted
• chopped green onions, for garnish (optional)

Here's how to make it: 

1. Melt the butter in a skillet. Cook the onion until soft, about 4 to 5 minutes.
2. In a bowl, mix together the cooked onions, sour cream, soups and 2 cups of the cheese. Season with salt and pepper. (Try other cheeses in this potato casserole like gruyere, fontina, Monterey Jack, pepper-jack or provolone.)
3. Fold in the hash brown potatoes. Pour the mixture into a greased 13x9-inch casserole dish. 
4. Combine the topping ingredients in a small bowl. (Don't have cornflakes? Try panko breadcrumbs instead.)
5. Top the potato mixture with the remaining cheddar cheese and then sprinkle with the topping. 
6. Bake in a preheated 350-degree F oven for about 40 minutes. Garnish with chopped green onions. Store the potatoes in an airtight container in the fridge. Reheat in the microwave.
