Mom's Favorite Lemon-Glazed Blueberry Muffins Recipe Is Marvelously Moist

Lemon and blueberries are a match made in baking heaven. Skip the box blueberry muffin mixes and make this easy blueberry muffin recipe with a refreshing lemon glaze. It's so easy! The moist, tart blueberries are in a lemony, vanilla batter and topped with a sweet lemon glaze. 

The shopping list for these lemon-glazed blueberry muffins is simple: flour, sugar, baking powder, oil, milk, an egg, lemon juice (fresh is best), lemon zest, vanilla extract and fresh blueberries. While the blueberry muffins bake in the oven, stir up the lemon glaze, which is made with powdered sugar and lemon juice. So simple!

Servings: Makes about 12 muffins

Ingredients

  • 2 cups flour
  • 1/2 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/4 cup vegetable oil
  • 1 cup milk 
  • 1 egg
  • 3 teaspoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla
  • 1 cup fresh blueberries

Lemon Glaze

  • 1/4 cup powdered sugar
  • 1 tablespoon lemon juice

Here's how to make it:

  1. Combine the flour, sugar and baking powder in a bowl. 
  2. In another bowl, combine the oil, egg, milk, lemon juice, lemon zest and vanilla.
  3. Combine the wet ingredients with the dry ingredients.
  4. Fold in the blueberries.
  5. Pour the batter into muffin tins lined with baking liners. Bake in a preheated 400-degree F oven for about 15 minutes.
  6. To make the glaze, stir together the powdered sugar and lemon juice in a bowl. Spoon over the muffins.
