  • 2 eggs
  • 1 cup finely shredded mozzarella cheese

Here's how to make it: 

  1. Combine the eggs and cheese in a bowl. Mix well.
  2. Cook one-fourth of the batter in a preheated waffle maker that's been coated with nonstick cooking spray for about 2 to 3 minutes. Remove to a plate and repeat with the remaining batter. Makes four waffles.
