Sweet with a little heat, this spicy maple grilled chicken recipe is what to grill when you don't have much time. The sweet and spicy maple grilled chicken recipe has just four ingredients and is ready to eat in about 25 minutes.
This high-protein recipe has a short shopping list. Here is what you'll need to grill up these juicy chicken thighs: boneless/skinless chicken thighs, maple syrup, sambal oelek and olive oil. Bone-in chicken cold be substituted, but would need longer cook time on the grill.
Sambal oelek is a spicy Indonesian chili paste that originated in Indonesia. "Sambal" means chili sauce and "oelek" refers to the process of grinding the sauce in a mortar and pestle. You can find the spicy chili paste on the Asian aisle of most grocery stores.
Serve this grilled chicken with your favorite side dishes. Use the leftovers to make chicken salad.

Ingredients
- 2 pounds boneless chicken thighs
- 1/2 cup pure maple syrup
- 2 teaspoons sambal oelek
- 3 tablespoons olive oil
Here's how to make it:
- Combine the maple syrup, sambal oelek and olive oil in a small bowl. Remove 1/2 cup to a large bowl, reserving the rest.
- Add the chicken to the large bowl and toss with the maple syrup mixture. You could also put the ingredients into a plastic food storage bag. If you have time, let the chicken marinate for a while. If longer than 30 minutes, pop it into the fridge.
- Heat an indoor grill or outdoor grill to medium heat. Cook the chicken, basting with the remaining sauce, until cooked through, about 20 minutes. Chicken is cooked through at 165 degrees F internal temperature on a food thermometer. If you don't have a grill, you could cook the chicken on a grill pan or in a cast iron skillet. Store any leftover chicken in an airtight container in the fridge.
