Love lasagna, but hate how long the Italian dish takes to make? I hear you! Being from an Italian family, I know how long it can take to make a pan of lasagna. This easy spinach Parmesan lasagna rolls recipe is like lasagna, but easier and a lot quicker.
Spread. Roll. Bake. Done. Your entire family will enjoy this super easy and cheesy shortcut lasagna rolls recipe. To make these high-protein lasagna rollups you will need just seven simple ingredients. Here is your short Italian-inspired shopping list: lasagna noodles, frozen spinach, eggs, ricotta cheese, mozzarella cheese, Parmesan cheese and a jar of your favorite spaghetti sauce (I use marinara sauce).
Serve this flavorful vegetarian lasagna rolls for dinner with a salad and garlic bread. If you live with someone who has to have meat for dinner, you could add some cooked, crumbled Italian sausage or ground beef. I like to bake the rollups in two casserole dishes so I can freeze one for later.

Ingredients
- 12 lasagna noodles, cooked according to package directions
- 10 ounces frozen spinach, thawed and squeezed dry
- 2 eggs
- 2 1/2 cups ricotta cheese
- 3 cups shredded mozzarella cheese (divided)
- 1/2 cup freshly grated Parmesan cheese
- 24 ounces (1 jar) spaghetti sauce
- Combine the spinach, eggs, ricotta, 2 1/2 cups of the mozzarella and Parmesan. Mix well. Add salt and pepper, to taste. (Make sure to squeeze the spinach dry before using.)
- Pour about 1 cup of the spaghetti sauce on the bottom of a 13x9-inch baking dish.
- Spread about 1/3 cup of the spinach-cheese mixture onto each lasagna noodle. Roll up and place, seam side down, in the baking dish. Pour the remaining sauce over the top and sprinkle with the remaining mozzarella.
- Bake in a preheated 375-degree F oven for about 10 minutes. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
