When it comes to dinner recipes, quick and delicious is what I'm all about. This easy skillet Caesar chicken recipe is both of those things. My family loves this easy chicken dinner (and they don't need to know how easy this Caesar recipe is to make)!
To make this simple one-pan chicken breast recipe you will need just five simple ingredients for the chicken. Here is your shopping list for this gluten-free recipe: chicken breasts, olive oil, sour cream, Parmesan cheese and Caesar salad dressing. For serving, you'll need either egg noodles or mashed potatoes. But really, that's up to you. The creamy chicken would be delicious on its own or over a grain like rice or quinoa.

Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 cup sour cream
- 1 cup grated Parmesan cheese
- 2 cups Caesar salad dressing
Here’s how to make it:
- Heat the olive oil in a skillet. Add the chicken and cook about 3 to 4 minutes per side to brown. (You could use boneless chicken thighs instead of breasts.)
- Combine the remaining ingredients. Pour over the chicken. Bring to a boil, reduce heat and simmer on medium-low for about 30 to 40 minutes, flipping chicken every 10 minutes. Transfer chicken to a plate. (Chicken is cooked at 165 degrees F internal temperature on a food thermometer. For a gluten-free dinner, make sure to use Caesar salad dressing without gluten. Read the label.)
- Let the sauce stand for 5 minutes, then whisk until well combined.
- Serve the chicken either whole or sliced with the sauce over mashed potatoes, noodles or rice. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
