- 3 cups grated carrots
- 1/2 cup raisins
- 3/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped shallots or green onions
- 1 teaspoon lemon juice
Here's how to make it:
- Combine the mayo, mustard, shallots/green onions and lemon juice.
- Stir in the carrots and raisins. Season with salt and pepper. Refrigerate until ready to serve.
