Cheesy Salmon Patties Are Super Quick (But Don't Let 'Em Stick!)

You can always find a can of salmon in my pantry. When my kids were little, it was an easy dinner for those busy school nights. Here's a different twist on the traditional salmon patties. They can stick very easily because of the cheese, so be sure to use a nonstick pan and keep an eye on them. 

You'll need:

  • 1 large can salmon, drained and flaked
  • 1 egg
  • 1/4 cup buttermilk
  • 1/3 cup self-rising flour
  • 1 cup shredded Cheddar cheese
  • oil, for frying

Here's how to make them:

  1. Mix all ingredients together well. Season with salt and pepper, to taste. Shape into patties.
  2. Heat a little oil in a skillet and cook until browned on both sides. Serve.
