Surprise your family with a stack (or two!) of these fluffy old-fashioned blueberry pancakes. The blueberry pancakes are so easy to make from scratch, so skip the boxed pancake mix for this pancake recipe.
To make these incredibly fluffy pancakes you will need to grab the following ingredients from your fridge and pantry: milk, white vinegar, flour (all-purpose or gluten-free), granulated sugar, baking powder, baking soda, salt, an egg, butter and fresh blueberries. These easy blueberry pancakes are delicious for breakfast or brunch with your favorite morning side dishes. We like them with either breakfast sausage or bacon and a big bowl of fresh fruit.

Ingredients
- 3/4 cup milk
- 2 tablespoons vinegar
- 1 cup flour (all-purpose or gluten-free flour)
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- 1 cup fresh blueberries
Here's how to make it:
- Combine the milk and vinegar in a bowl. Set it aside for about 2 minutes. (You substitute buttermilk for the milk and vinegar.)
- Combine the flour, granulated sugar, baking powder, baking soda and salt in another bowl. Add the egg, milk mixture and butter. Stir to just combine. (You could add some vanilla extract, if desired.)
- Fold in the blueberries. (Stir gently!)
- Heat a little butter or cooking oil on a griddle or skillet. Ladle the pancake batter into the hot pan and cook until you see bubbles on the top. Flip the pancakes over and continue to cook until cooked through. Serve with maple syrup or pancake syrup and additional butter. Garnish with more fresh blueberries, if desired.
