So convenient and perfect for this hectic time of the year. The cake mix cookie recipe has healthy oats, applesauce and fresh apple. Yum! To make a batch of these apple oatmeal cookies for your kiddos (and yourself!), you will need just a handful of simple ingredients from the fridge and pantry. Here is your shopping list: a yellow cake mix, quick-cooking oats, brown sugar, ground cinnamon, an egg, applesauce and fresh apples for grating. This shortcut recipe bakes up in about 15 minutes.
These oatmeal cookies are great snacks for the kids after school or for school lunches, or pack a few in your purse for a quick pick-me-up. They also are a quick dessert after dinner.

Ingredients
- 15 ounces (1 box) yellow cake mix
- 1 1/2 cups quick-cooking oats
- 1/2 cup brown sugar, packed
- 2 teaspoons cinnamon
- 1 egg
- 3/4 cup applesauce
- 1 cup finely chopped apple
Hereโs how to make it:
- Combine the cake mix, oats, sugar and cinnamon in a bowl.
- In another bowl, combine the egg, applesauce and chopped apple. (Don't chop the apple too early or it will turn brown. Use whatever type of apple you like for this cookie recipe.)
- Add the wet ingredients to the dry. Mix well.
- Drop by teaspoons full onto cookie sheets that have been sprayed lightly with nonstick cooking spray.
- Bake in a preheated 350-degree F oven for about 12 to 15 minutes or until golden. Store the cookies in an airtight container to keep them fresh.
