I have been on a food processor kick, so when I saw a recipe for walnut "meat" I had to try it. I am so glad I did! Here is my rendition. Use this "meat" in a taco, burrito, lettuce wrap, for a veggie burger or straight out of a bowl. Dress it up with salsa, veggies like sweet potato, Daiya shreds, black olives or avocado.

Ingredients
- 1 cup walnuts
- taco seasoning
- onion powder
- garlic salt
- lentils, cooked
- quinoa and brown rice mix, cooked (I like Seeds of Change Quinoa Brown Rice With Garlic)
Here's how to make it:
- Soak walnuts in water for an hour. Strain and add to your food processor.
- Add taco seasoning, onion powder and garlic salt. Blend until it resembles a ground meat texture.
- Fold in the cooked lentils and quinoa/brown rice.
