Who doesn't love chicken parmesan for dinner? This easy shortcut chicken parmesan recipe will get you to the table so you can enjoy it – fast! The quick Italian recipe has just a few simple ingredients, cooks in one pan and is ready in under 30 minutes.
The juicy high-protein chicken parmesan starts with skinless, boneless chicken breasts. The chicken is dipped into egg and then into breadcrumbs before being pan-fried in olive oil until golden. Remove the chicken to a plate and heat the spaghetti sauce in the same pan. Put the chicken back into the pan, cover and cook about five minutes. Top with mozzarella cheese, cover and let the cheese melt. Done! (Check out the health benefits of protein.)
Serve this crispy chicken breasts and tomato sauce for dinner over hot pasta. Sprinkle with lots of freshly grated Parmesan cheese. Add a side salad or fresh vegetable and garlic bread, and you've got a winning budget recipe the whole family will love.
Cuisine: Italian
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 4
Ingredients
- 4 skinless, boneless chicken breasts
- 1 egg, beaten
- 1/2 cup dry breadcrumbs (regular or gluten-free)
- 2 tablespoons olive oil
- 2 cups of your favorite spaghetti sauce
- 1/2 - 1 cup shredded mozzarella cheese
Optional Ingredients for Serving
- hot cooked spaghetti noodles
- grated Parmesan cheese
Here's how to make it:
- Heat the olive oil in a skillet over medium heat. Beat the egg in one bowl and put the breadcrumbs into another.
- Dip the chicken into the beaten egg and then into the breadcrumbs. (Use gluten-free breadcrumbs for a gluten-free dinner.) Cook in the hot oil until chicken is done and brown on both sides, about 7 to 9 minutes depending on how thick your chicken is. Remove chicken and set aside. (Chicken is cooked through at 165 degrees F on a food thermometer.)
- To the same pan, heat the spaghetti sauce. (Use whatever type of spaghetti sauce you like for this recipe.) Return chicken to the skillet, cover and cook on low about 5 minutes. Top with desired amount of the mozzarella cheese and cook until it has melted.
- Serve on top of hot spaghetti noodles, if desired. Sprinkle with freshly grated Parmesan cheese. (Sprinkle the finished dish with some parsley flakes for color.) Store the leftovers in an airtight container in the fridge. (The leftovers make a mean chicken Parmesan sandwich!)
