I love that you need just one bowl and only seven ingredients to make this divine dressing. To make this irresistible sauce, here are the gluten-free ingredients you'll need to gather: plain Greek yogurt, feta cheese, extra virgin olive oil, fresh lemon juice, honey, minced garlic and fresh parsley. All you do is combine the ingredients then serve however you like – all in about 10 minutes. This vegetarian recipe could not be any easier.
Serve this creamy feta sauce as a salad dressing, a spread on top of crackers or crusty bread, a dip for crisp vegetables or as a Mediterranean topping on just about any protein or vegetable. I served it as a dip and everyone asked me to make it again soon.
Cuisine: Mediterranean
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes
Servings: 6
Ingredients
- 1 cup plain Greek yogurt
- 5 ounces feta cheese, crumbled fine
- 2 tablespoons extra virgin olive oil
- 2 1/2 tablespoons fresh lemon juice (the juice of about 1 medium lemon)
- 2 teaspoons honey
- 1 teaspoon garlic, minced
- 1/2 cup fresh parsley leaves, diced fine (I used Italian flat-leaf parsley)
- salt and black pepper, to taste, if desired (optional, but I used about a 1/4 teaspoon of each)
Here's how to make it:
- In a medium mixing bowl, add the yogurt, feta, olive oil, lemon juice, honey and garlic. Season with salt and pepper, to taste, if desired. Whisk to blend. Taste to see if you'd like any more of any of the ingredients. (I prefer to use fresh-squeezed lemon juice, but in a pinch, you can use bottled lemon juice.)
- Fold in the parsley.
- Serve immediately, or refrigerate before serving. Garnish with additional fresh parsley, if desired.
- Store leftovers in an airtight container in the refrigerator.
