Even while embracing all the autumn flavors, I'm still holding onto the summer ones whenever possible. This easy high-protein Caprese-style salad recipe with peaches, cucumbers and mozzarella is my latest obsession. With sweet peaches still mostly available in grocery stores, it's the perfect simple salad to bridge from warmer weather to cooler weather cooking. And the colorful salad is as nutritious as it is delicious.

This high-protein salad recipe is the perfect balance of sweet and savory from the peaches and tomatoes, with the cucumbers providing some refreshing crunch. And, you get the health benefits of peaches, the health benefits of tomatoes and the health benefits of cucumbers throughout. The mozzarella adds a nice punch of protein (along with the health benefits of mozzarella), and the balsamic glaze is the perfect finishing touch. Plus, the salad is just so pretty to look at!
To make this delicious and nutritious salad recipe, here are the gluten-free ingredients you'll need to gather: peaches, cucumbers, tomatoes, fresh mozzarella, fresh basil, extra virgin olive oil and balsamic glaze. All you do is layer the salad ingredients, top them with olive oil and balsamic glaze then serve. So simple and satisfying.

Ingredients
- 2 medium ripe peaches, sliced
- 1 medium cucumber, sliced
- 3 medium ripe tomatoes, sliced
- 8 ounces fresh mozzarella cheese pearls, drained (or fresh mozzarella slices)
- 1/3 cup fresh basil leaves
- 2 tablespoons extra virgin olive oil, or to taste
- 2 tablespoons balsamic glaze, or to taste
- salt and pepper, to taste (optional, but I used about 1/3 teaspoon of each)
Here's how to make it:
- On a shallow serving dish or platter, arrange the peaches.
- Layer the cucumbers and tomatoes on top of the peaches. Season with salt and pepper, to taste, if desired.
- Layer the mozzarella and basil on top of the tomatoes. (I used fresh mozzarella pearls, but you also could use fresh mozzarella slices.)
- Drizzle with olive oil and balsamic glaze, then serve. Store leftovers in an airtight container in the refrigerator.
