Not bragging, but my homemade meatball skills have skyrocketed. A simple meat sauce used to be my go-to for spaghetti night, but now you'll see me rolling out homemade meatballs with a big smile on my face because the odds are high they will melt in my mouth and make me close my eyes on the first bite. You know what I'm talking about.
My Italian meatballs are never exactly the same. With a slight tweak here, and a new ingredient there, you can play around with meatballs. These soft, moist meatballs benefited from a hack I learned for making the best burger patties: adding mayonnaise. The cooking hack is to add a tablespoon of mayonnaise to each pound of ground beef. And yes, it works on meatballs, too.
To make these budget-friendly magic meatballs that melt in your mouth you will need some basic ingredients from your fridge and pantry. Here is what to gather for your high-protein and low-carb meatball night dinner: ground beef (read about the health benefits of protein), onion, Parmesan cheese (Parmesan is one of the healthiest cheeses), dry breadcrumbs, milk, an egg, garlic powder, onion powder, Italian seasoning, mayonnaise and olive oil for frying.
Use these meatballs for spaghetti and meatballs (or whatever kind of pasta you like), in meatball casseroles, for meatball sandwiches or however you enjoy your meatballs. This easy dinner recipe is Italian cooking with a twist. A delicious one! Hope you enjoy.

Ingredients
- 1 pound ground beef
- 3 tablespoons minced onion
- 1/4 cup grated Parmesan cheese
- 1/2 cup dry breadcrumbs
- 1/3 cup milk
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1 tablespoon mayonnaise
- olive oil, for frying
Optional Ingredients
Here's how to make it:
- Put all the ingredients into a mixing bowl. Season to taste with salt and black pepper. (My Italian seasoning blend has salt in it, so I only added black pepper.)
- Mix well to combine. Do not overmix.
- Heat a drizzle of oil oil in a skillet over medium heat. Form the mixture into meatballs. (Make them as big or small as you like. I got 12 meatballs.) Put the meatballs into the hot oil. Cook until browned on the bottom.
- Flip the meatballs over and continue to cook until they are cooked through. (If you are going to simmer the meatballs in sauce, you do not have to cook through all the way through.) The meatballs are ready to be used as desired.
- If you're adding sauce, pour it over the meatballs. Simmer over low heat until you're ready to eat.
- Store the meatballs in an airtight container in the fridge. You can also freeze them to quick dinners later.
