Ingredients
- 4 large eggs, beaten
- 2 tablespoons extra virgin olive oil
- 1 cup plain Greek yogurt
- 1 1/4 tablespoons apple cider vinegar
- 2 cups almond flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Here's how to make it:
- In a large mixing bowl, add the eggs, olive oil, Greek yogurt and apple cider vinegar. Whisk to combine.
- Add the almond flour, baking powder and salt. Stir to combine.
- Evenly spread the batter into an 8x4-inch loaf pan that's been lined with parchment paper.
- Bake in an oven that's been preheated to 350 degrees F until bread is cooked through and golden (it should pass the toothpick test), about 30 to 35 minutes. (If the loaf is getting too brown on top, you can cover it with aluminum foil.)
- Allow loaf to cool in the pan before removing to a wire rack to cool completely before slicing and serving.
- Store the bread in an airtight container (in the refrigerator lasts longer). This bread is extra delicious when toasted.
